The 5th Annual AUTHORS in BLOOM is finally here!  I’m so excited to welcome you to FUN HAPPENS! As you realize, not all authors are particularly great gardeners or cooks, but we do our best to leave you a little something… My recipe is simple and delicious. It’s a raspberry pie that when heated and served with a scoop of ice cream, makes for a yummy ending to a lovely dinner.

FRESH RASPBERRY PIE (from Thrifty’s Fresh Summer Magazine)

Prep Time 20 minutes (You like it already, right?)

YUMMY!

Cooking Time: 50-55 minutes

Makes: 1 pie (8 servings)

  • 6 cups fresh raspberries (from you garden if you’re a gardener…ha!)
  • 1/2 cup granulated sugar
  • 1/4 cup flour
  • 1 Tbsp. freshly squeezed lemon juice (makes the raspberries taste tart, not sweet)
  • 1 large egg, beaten
  • 1 Tbsp. cold butter, cut into small pieces
  • 1 Tenderflake, deep-dish, double -crust pie shell
  • 1 tsp.granulated sugar

Set the oven rack in the middle of the oven; preheat to 425 degrees F. Place the raspberries, sugar, flour, and lemon juice in a bowl and toss to combine (Don’t worry if you crush some of the berries). Let stand for 15 minutes. Brush the bottom pie shell all over with some of the beaten egg to provide a seal between the filling and the crust. (I NEVER knew to do this before…) Spoon and spread the berries into the pie shell and top with the butter pieces.  Brush the edges of the pie with beaten egg. Set on the top crust and crimp the edges to seal. Brush the top of the pie with remaining beaten egg and sprinkle with 1 tsp. granulated sugar. Cut a small hole in the center of the pie to allow steam to escape.  Bake the pie for 10 minutes. reduce the heat to 250 degrees F and bake until golden brown, about 35- 40 minutes more.

This is a reminder that the annual Authors in Bloom Blog Hop is scheduled to begin April 7th at 6:00am EST and the tour will continue for  10 days. This gives readers the opportunity to visit 5 or 6 sites per day.

How does it work

All 57 authors participating will post their giveaway, gardening tip, recipe or both on their website, beginning April 7th and leaving their contest open through the 16th.  You will have 10 days to enter each individual author contest and then submit your entry for the grand prize!!  To win the grand prize, you must visit each and every author on the hop.  Each site will post the links of participating authors but please feel free to visit www.diannevenetta.com to find the author link list at any point in time. My blog: FUN HAPPENS! is #33 on the Landing Page (just for your information). Some authors might offer more than one entry to win, ie. a “follow” on Twitter or a “tweet,” maybe even a visit to their facebook or pinterest page, however only one is required to enter.

How do I submit my grand prize entry?

What can I expect out of this hop?

Literate Fur Kids

As a novice gardener, I find myself continually dropping by nurseries these days. When I say novice, I mean it.  The following 3 photos demonstrate the progression from creating a raised garden bed, putting soil in the bed, planting the veggies and VOILÁ!  There are actual little plants germinating in that garden plot!  Simply amazing! Are you amazed?  Tell me you are!

veggiesCan you see those little veggies poking out of the soil…. hmmm …. I KNOW YOU CAN! Anyways, I have digressed. Is it obvious that I’m becoming a proud gardener?

So, as I was saying, I seem to be hanging out at a lot of nurseries these days and I found something astonishing. I had no idea that dogs can actually read, but the nursery had it covered for both large dogs (sign attached to the fence) and short dogs (sign on the ground of the entrance).  And you know what, it appeared that  the dogs actually are literate, as there wasn’t a single dog in the vicinity of the  nursery!

I don’t have a gardening tip, but I do have a quote from an exceptional novel that I believe has inspired me to want to garden.  Read BLACKBERRY WINE- A NOVEL by Joanne Harris (author of Chocolat).

Since I don’t pretend to think of myself as a knowledgeable gardener, I am providing you with 2 recipes, instead. Don’t forget to copy these recipes:

The Tabbouleh comes from COOKING SCHOOL MEDITERRANEAN.  We are fond of quinoa and the veggies and herbs in this make a refreshing  salad. It serves 4.

generous 1 cup quinoa , juice of 1/2 lemon

2 1/2 cups water , 2 tbsp extra virgin olive oil

10 vine ripened cherry tomatoes, halved , 4 tbsp chopped fresh mint

3 in. piece of cucumber , 4 tbsp chopped fresh cilantro

3 scallions, finely chopped , 4 tbsp chopped fresh parsley

salt and pepper

The Key Lime Pie recipe is from Weightwatcher’s 50th anniversary cookbook. I often travel in the US and love sampling the Key Lime Pies of the Southern States. Last year’s piece was superb in Charleston and 2 months ago, the tart taste in Key West was a welcome joy on a blistering hot day!

Crust: Combine 1 1/4 cups graham cracker crumbs with 1/4 cup melted butter. Press on bottom of 9 in. springform pan.

1/2 cup fresh lime juice (smaller key limes from Florida Keys are preferable)

2 tsp unflavored gelatin

1 (14- ounce) can sweetened condensed mill (I use the light.)

2 tsp grated lime zest

1 1/2 cups whipping cream

1 small lime, thinly sliced.

(I like my pie super tart and limey, so I add about 1/4 cup of lime curd to the mixture.)

1. Pour the juice into a small bowl and sprinkle with the gelatin. Let stand until the gelatin is softened, 5 minutes. Transfer to a small saucepan and heat over low heat, stirring, until the gelatin dissolves.

2. Stir in the condensed milk and cook, stirring occasionally, 5 minutes longer (do not boil). Remove from the heat and let cool 10 minutes. Transfer to a large bowl and refrigerate 30 minutes, or until the mixture starts to set.

3. Whisk the thickened filling until creamy and smooth ; stir in the lime zest (and LIME CURD, if you want it). Using a a rubber spatula, gently fold in the whipped topping until combined. Pour into the pie crust and refrigerate until firm, at least 3 hours or overnight. Garnish with the lime slices just before serving.

IT’S ALL ABOUT LEMON!

Our favorite SPAGHETTI (Chatelaine, Jan., 2012)

LEMONY SPAGHETTI with SHRIMP & BASIL   (PREP: 30 min.)

250 g                          spaghetti (I use whole wheat)

3 tbsp                         extra-virgin olive oil

454 g. pkg.                 frozen peeled black tiger shrimp, thawed

1                                   garlic clove, minced

2 tbsp                         fresh lemon juice

2 tbsp                         diced preserved lemon peel (I use fresh lemons)

1 tbsp                         brine from preserved lemons

1/2 cup                      chopped basil

1/4 cup                      grated parmesan

Cook pasta in a large pot of boiling water, following package directions but omitting salt, until al dente, 6-8 min.

Heat a large frying pan over medium-high. Add oil, then shrimp and garlic. Stir-fry until shrimp turns pink, 4-6 min. Remove from heat. Drain pasta and add to shrimp. Stir in lemon juice, preserved peel, brine, basil and parmesan cheese.

Serves 4 / per serving 475 calories

Serving Tip: omit shrimp and serve this pasta as a side dish with roast pork.

 

LEMON GARLIC BARBECUE CHICKEN DRUMSTICKS (Thrifty Foods Fresh Magazine)

(I make these in a roasting pan in the oven on wet, wintery days.)

 Prep: 10 min., plus marinating time

Cooking Time: about 35 min.

Makes 6 (2 drumstick) servings

  • 1/3 cup olive oil, plus some for the grill
  • 1 Tbsp. finely grated lemon zest
  • 3 Tbsp. fresh lemon juice
  • 2 to 3 large garlic cloves, minced
  • 1 tsp. paprika
  • 1 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. freshly ground black pepper
  • 12 chicken drumsticks
  • Salt to taste
  • olive oil for the grill Parsley sprigs and grilled or fresh lemon slices for garnish

Combine the first 9 ingredients in a bowl large enough to hold the chicken. Add the chicken and turn to coat.  Cover, refrigerate, and marinate the chicken for 4 hours, or overnight, turning occasionally.

Preheat your barbecue to medium-high. Remove chicken from marinade and set on a plate. Use paper towel to blot away marinade from any overly wet pieces of chicken. Season the chicken with salt. (I use pepper instead.)

When hot, lightly oil the grill. Grill the chicken 2 to 3 minutes per side, or until the exterior is nicely colored. Move the chicken to one side of the barbecue. Turn the heat off on that side of the barbecue; leave the other side at medium-high. Close the lid and cook, turning the drumsticks from time to time, for about 30 minutes, or until cooked through.

Set cooled chicken on a serving platter or board. Garnish with parsley sprigs and lemon slices, if desired, and serve.
